2 tablespoons olive oil, divided
4 skinless chicken breasts
Freshly ground pepper
1 large yellow onion, sliced
2 cups Cremini mushrooms, sliced
1/2 cup Marsala wine
1 tablespoon butter
In a large pan over medium heat add 1 tablespoon olive oil. Sprinkle salt and pepper over chicken breasts and place into pan. Cook chicken until golden brown, approximately 10 minutes per side until internal temperature reaches 165°. Remove from pan and set aside, cover to keep warm.
In same pan add remaining 1 tablespoon of olive oil and onion. Cook over medium heat for 5-7 minutes stirring occasionally until onions start to turn clear.
Stir in mushrooms. Cook for 2 minutes.
Add Marsala wine and cook for 5 minutes, stirring occasionally.
Stir in butter until melted.
Serve onions and mushrooms in sauce over chicken breast.
